Monday, January 25, 2010. Charlie Trotter started cooking in 1982 and opened his first restaurant in 1987 in a Chicago townhouse. He has classic French style and believes in the pursuit of excellence through total perfection. He started cooking as a way to entertain his friends. Before opening his restaurant, he catered for the elite crowd to develop a following and build his ideas about food based off their preference.
